Simple Crumble Top Peach Pie
Is it me, or is peach season a little late this year? It seems weird to be baking with peaches in September, but that is ok by me.
My mother-in-law works at a local orchard each summer. For us, that means a nice, big 10 pound bushel of amazing, perfectly ripe peaches. We can barely eat them fast enough before they go bad, so I end up doing a bit of baking to use them up. This year, I decided I would try a different spin on my peach pie. Why not combine my favorite peach pie with my favorite streusel apple pie? Add my favorite crust recipe and you have a wonderfully delicious trifecta!
Here is what you will need:
Simple Crumble Top Peach Pie
Pie crust for deep dish pie (store bought or your favorite recipe)
Filling:
10-12 large fresh peaches
1 cup sugar
1/4 cup flour
1/2 tsp cinnamon
Topping:
3/4 cup sugar
1/2 cup flour
1/2 cup oats
1/4-1/3 cup butter
My go-to crust I use for literally every recipe that calls for crust is Pioneer Woman's Perfect Pie Crust. It comes out perfect every time and it is very simple to make.
After getting the crust ready, roll it out and place it in a deep dish pie plate. Now it's time to start peeling the peaches. 10-12 large peaches is about perfect for a deep dish pie. Slice 'em up and put them into a large bowl. Add 1 cup of sugar, 1/4 cup of flour and 1/2 teaspoon of cinnamon and toss together gently. Then pour mixture into the pie plate.
Next, combine 3/4 cup sugar, 1/2 cup flour and a 1/2 cup oats into a bowl and stir. Cut in 1/4 cup of butter (or more if you like) with a pastry cutter until crumbly. Pour mixture evenly over the top of the peaches. Cover the crust with foil and bake.
Now, this is where it gets dicey. Depending on how juicy your peaches are will be how long you bake. Generally, 45-55 minutes in a 375 degree oven would suffice, but if the pie appears watery or soupy, you will want to bake longer until the juices set up. My peaches were super ripe and very juicy. I ended up baking the pie an additional 1/2 hour just to set up the juice. So just play it by ear.
When done, set on the counter to cool and dig in!!! So delicious!
